I think that the wolf should've been bigger. After all, it is the "big bad wolf", capable of swallowing an old woman whole.
Of course, making the wolf bigger might've created problems for balancing red riding hood, but as long as the guts serve as a sort of "stand", it wouldn't really be an issue.
Either way I wouldn't have cared for the wolf, but it still should've been bigger, and as someone else mentioned, meaner looking too.
